The paper is a continuation of the research (Przybysz i Wojnar 2000, Wojnar 2001) on estimation of the average mass of cuts obtained during partitioning of beef half carcass. Multivariate binary regression model is applied in order to analyze joint influence of quantitative (slaughter weight) and qualitative (sex) variables, on weight of selected cuts. The parameters of the model are estimated and their significance is checked. Confidence regions for average mass of cuts with respect to initial weight of an animal and its sex were determined.
