The use of segmented model of regression for evaluation of relationship between selected meat quality traits of animals

Summary:
The aim of this paper was to presentations the results of researches in which for formulation of the relationship between meat quality traits a segmented model of regression was used. The quadratic model with plateau was a frequently used for explanations of relationship between ultimate pH and glycolytic potential of pigs, calves and sheep in different muscles. This model gave the best explanation of this relation between glycolytic potential content and pH. In this model ultimate pH decreases following a curvilinear regression when glycolytic potential increases, until a plateau value and from threshold above which further increase in glycogen levels does not lead to noticeable changes in pH that depends from another unknown factors. A similar model was used for relationship between tenderness and pH of meat.
