Summary:
The aim of this paper is an application of regression analysis for estimation of physico-chemical properties and chemical of horses meat composition.
The highest variableness coefficient among analysed quality properties characterize fat content and expressible and marbleness: Water content, protein and ash characterize the lowest variableness coefficient. Equations of multiple regression over 90 let to estimate fat content, water content, marbleness and colour of meat with big precision (%).
