Summary:
A main goal of this paper was finding mathematical description of the development of the bacterial populations of Yersinia enterocolitica and Klebsiella pneumonic in changing environment of food products. The effects of NaCl concentration and pH on the ability of vegetative cells of mentioned bacteria to initiate aerobic growth in broth at 22-25°C were studied in a factorial design experiment. By using multiple regression model with natural restrictions determining a biological sense of the examined phenomenon, equations were derived which related the decimal reduction of the bacterial population to the concentration of NaCl and pH of broth to which the population was exposed. In an application from these questions, the percentage of inoculated cells capable of initiating growth could be calculated.
